RECIPE PREPARATION Spicy cheese cream:

Onions are cleaned and chopped in the robot.

Put all the other ingredients over the onion and mix until it becomes a creamy paste.

  • 250 g of cottage cheese
  • 100 g telemea
  • 100 ml cream
  • 2-3 strands of green onions
  • 100 g butter
  • fresh dill

Mix the butter and cottage cheese well in a bowl. The cheese must be drained of whey. Crush the telemeau and add it to the mixture. Add the cream and mix until the mixture turns creamy.

Finely chop the green onions and dill and place them over the cream cheese, stirring with a wooden spoon. If necessary, season with salt and pepper. Leave the cream in the fridge for half an hour before serving.

Serve with toast, canapés or croquettes. Good appetite!

It was the premiere vacation. For the first time I ate raw peppers. And I liked it! I still can't eat it empty, but anyway. I ate it in a spicy cream cheese from Thessaloniki (Thessaloniki).

On the way to Skiathos we stopped for a day there to catch our breath after 16 hours of driving. We were going to sleep in an apartment on Agiou Dimitrou Street and as we got out of the car we saw the tavern "O Kostas", specialized in pork souvlaki. I ordered a portion with spicy cheese and grilled pita. The cheese seemed divine to me from the first sip. What a surprise it was that instead of rejecting the pepper, I wanted more. It was as if the girl reversed the unpleasant taste (that's how I perceive peppers) and turned it into something addictive for my taste buds.

Now I may be too ecstatic, but you understand me, it's a whole new experience, a whole new taste. After that I looked for the same taste in the taverns of Skiathos, but I did not find it. There tirokafteri it was prepared with paprika or roasted peppers and chili flakes (it was pink, not white) and it didn't look as special to me. In fact, I also posted 2 years ago the "tirokafter recipe", in which I used green but baked hot peppers and it was different. But the raw Bulgarian pepper gave it exactly the taste we were looking for, the taste of Thessaloniki. The perfect taste.
