  • 1 kg. - yellow onion
  • 60 gr. - butter
  • 2 tablespoons olive oil
  • 1 tablespoon - white flour
  • 100 gr. & # 8211 original Landana cheese (gruyere or any type you want)
  • 100 ml. - dry pink or white wine
  • 8 slices of baguette
  • 2-3 twigs - fresh thyme
  • Salt and black pepper

For vegetable soup:

  • 2 celery stalks
  • 1 carrot
  • 1 onion
  • A hand & # 8211 fresh parsley
  • 1.5 l. - flat water

Method of preparation:

  1. First of all prepare the soup: Put in a saucepan the carrots, onions, celery stalks, parsley, all cut into large pieces. Pour water over it and put the pan on medium heat.
  2. Cut the peeled onions into juliennes.
  3. During this time, the soup will start to boil and let it simmer for 25 minutes.
  4. Then heat a cauldron over medium heat, pour olive oil in it, add the butter and leave it until it melts completely. Then put the onion, season with salt, black pepper, stir and fry the onion over high heat for 25 minutes, stirring occasionally. Then turn the heat to medium and caramelize it for another 20 minutes, stirring periodically, so as not to forget it, because it can burn.
  5. After the onion has caramelized, add a tablespoon of flour, mix and pour the wine. Stir a little more and let it cook for a minute. Add the fresh sprigs of thyme, pour the strained vegetable soup. Stir and bring the soup to the boil. Remove the foam, turn the heat to low and simmer for 25-30 minutes.
  6. Meanwhile, cut the wand into slices. Grease the slices on both sides with melted butter and bake in the preheated oven at 200 degrees C until nicely browned and crispy.
  7. When the soup is ready, season it with salt and pepper to taste, and at the end remove the sprigs of thyme.
  8. Transfer the soup to clay baking containers, arrange 2 slices of baguette and cover with grated cheese.
  9. Put them on top of the preheated oven at 250 degrees C for 2-3 minutes or until the cheese is completely melted and browned nicely.
  10. Remove the soup from the oven, let it cool for a few minutes and serve it with pleasure. Good appetite!

Onion soup is one of the delicacies that France offers us. Simple to make from only four ingredients, it is a very tasty dish. The secret of onion soup is one thing: slow-cooking.

You need the following ingredients:

  • 1 kg red or white onion
  • 50 g butter
  • salt
  • 1 l chicken soup
  • Freshly ground black pepper
  • Fresh bread cut into thick slices
  • Gruyere or parmesan

Method of preparation:

Cut each onion in half lengthwise, then cut it into slices. Then cut the slices in half and put them in a bowl. Don't be scared if it looks like too many onions.

Cut half of the butter into pieces, but not very small.

Put the pan on medium heat and add half the amount of butter, cut into pieces. Let the butter melt and add the onion. Mix them well with the melted butter and sprinkle a teaspoon of salt on top.

Turn the heat to low and let the onion cook, stirring occasionally, for at least 45 minutes.

- 1.5 kg of white onions, cut into thin slices

- 1.5 l of concentrated beef soup (preferably homemade)

- 240 ml of red or white wine, sec

- a teaspoon of dried sage (optional)

- a raw golden onion (optional)

- 8 slices of French baguette (about 2.5 cm thick)

Method of preparation:

1. Put a thick-bottomed pan over low to medium heat, add a tablespoon of cooking oil and 2 tablespoons of butter to it. Then add the onion slices and mix well until they are all covered with fat. Cover them and leave them to harden until they become translucent and soft.

2. You are going to caramelize the onion, so you will have to set fire to the medium to the sea. Add half a teaspoon of sugar and a teaspoon of salt over the onion, then leave the onion without a lid, stirring constantly until it becomes brown and much smaller in volume.

3. Reduce the flame to low to medium and add 3 tablespoons of flour to the onion. The mixture must be cooked until the flour turns brown. If no paste is formed, you can add more butter.

4. Add a cup of concentrated hot beef soup, taking care to scrape the bottom of the bowl with a spatula to remove the sticky pieces. Then add the rest of the soup, wine and sage and simmer for about half an hour.

5. Now you have to make the croutons for the soup. Preheat the oven to 180 degrees Celsius. Grease each slice of bread with olive oil and place them all on the oven tray, letting them bake for about 15 minutes on each side. Meanwhile, check the soup to taste and add spices to taste.

6. Add 2-3 tablespoons of brandy to the soup and grate half of the raw onion in it. Then add about half of the Emmentaler cheese to the soup directly and mix.

7. Remove the bread from the oven and place it directly on the surface of the soup, then sprinkle the rest of the cheese and Parmesan over it. Sprinkle with a little oil, then put the dish in the oven at 175 degrees Celsius for half an hour. At the end, turn on the heat to brown the cheese.
