How do we make gingerbread?
Heat the honey together with the butter until it melts, then remove from the stove. Whisk the egg whites together with the sugar, and add the yolks, one at a time, to the hot honey, stirring quickly. Add the aromas and carob or cocoa powder, continue mixing, then add the flour mixed with baking powder, gradually, stirring vigorously.
It can also be done with a robot or with a mixer. Mix well, not to have lumps, it is good to mix for about 10 minutes, to incorporate air. At the end, add the beaten egg whites and mix gently, from the bottom up.

First we wash and clean the fruits and put them through the large grater. Squeeze a little juice and add the vanilla sugar, grated citrus peel and spice mix and mix well.
Separately in a bowl, mix the egg whites with a pinch of salt until they become foam. Add the sugar and mix for a few more minutes. Then gradually add the yolks, oil and milk, continuing to mix with the mixer on the lowest level. At the end we incorporate the flour mixed with the baking powder, using a spatula.
Add the fruit and mix carefully so that no foam is left.
Pour the composition into a large oven tray lined with baking paper and place in the preheated oven at 175 degrees for 30 minutes. Remove from the oven and leave to cool. I made the countertop the day before so that it could be cut better.
To cut the fir tree, I covered the cake in Al foil, I drew a fir tree and then with a knife with a sharp point and it cuts well, I cut the fir tree.
Prepare the cream: mix the eggs well with the powdered sugar, then add the water and the vanilla split in half. Put it on the steam bath and mix until it thickens and becomes like a pudding. Remove from the heat and leave to cool. After it has cooled, pour it into a bowl and mix, gradually adding the butter.
With a spoon, place the cream on the first sheet and level it nicely. It does not require syrup because the top is quite wet from the fruit. Place the other sheet on top and refrigerate for an hour.
Gingerbread Christmas tree
Yesterday I showed you the gingerbread recipe for Christmas and I saw that most of you suspected me that I used the figurines to decorate the Christmas tree. But no, this year I decorated the Christmas tree with globes. I used the figurines, respectively the stars for a gingerbread tree.
Ever since I started making gingerbread house every year, I kept thinking that it would fit very well with a big gingerbread tree, decorated in the spirit of Christmas.
To make the gingerbread tree, we need stars to cut cookies. I took the set from Wilton, on ebay, but you can also use other star shapes, provided they are of different sizes & # 8230
The Wilton set contains 10 shapes and I cut two of each. From the last star, of the smallest size, I cut 3 shapes, because one of them will be the star from the top of the tree.
To glue the stars together we used royal icing, the same one we use to assemble the gingerbread house. On the plate on which we are going to build the gingerbread tree, we place the first star, the largest in size, then we put a little royal icing in the middle of it (about the size of a coin).
We place the next star, of the same size, alternating the corners of the stars. Then again royal icing and the next star in size. We continue to glue the stars, alternating the corners until we reach the smallest star. Glue the top of the tree and let it harden for about an hour to "cement" to be as stable as possible.
Then, we color the remaining royal icing with a little green food coloring and use it to give color to our Christmas tree. While the icing is still soft, glue the "globes", respectively the colored candies.
Next to the gingerbread tree I built the house, which I let you admire without adding too many details because you have all the details on how to build a gingerbread house, here.
I hope you like the Christmas tree, even if it's hard work, it was worth the joy in Luca's eyes. I am very happy because every year I become more and more aware of what is happening at Christmas and I appreciate the efforts I make to have a Christmas as "like my mother".
Flavor in dishes
And if December still started, I thought I'd start posting goodies that can be prepared for the holidays. For the Christmas table, I think this cake would fit very well, because it has a nice Christmas tree inside. I was inspired by Cristina's recipe, but I used less sugar and it was enough. I invite you to test it too because surely the children will be very excited.
120 g butter at room temperature
80 g of sugar
120 g flour
1 teaspoon grated baking powder
1 teaspoon mint essence
1 teaspoon green food coloring (for a darker color try 1.5 teaspoons)

220 g butter at room temperature
190 g sugar
1 sachet of vanilla sugar
1 teaspoon vanilla extract
4 husband eggs
4 tablespoons milk
50 g black cocoa powder
220 g flour
2 teaspoons baking powder
Method of preparation:
Prepare the dough for the fir tree first. Mix the butter with the sugar and food coloring. Add the eggs gradually, stirring after each one. (I also put a tablespoon of flour with each egg, so as not to get a cut composition)
